Ingredients
  

  • 2 cans corn, drained Fresh or frozen corn can be substituted.
  • 1 cup sour cream Greek yogurt can be used as a lighter alternative.
  • 1 cup shredded cheddar cheese Pepper jack or mozzarella can be substituted.
  • ½ cup melted butter Use dairy-free butter if desired.
  • 1 cup cornmeal Ensure it’s gluten-free if needed.
  • 1 tsp salt
  • 1 tsp black pepper Adjust to taste.

Instructions
 

  • Preheat oven to 350°F (175°C).
  • In a large mixing bowl, combine drained corn, sour cream, and melted butter. Mix until smooth.
  • Add cornmeal, salt, and pepper. Stir until fully incorporated.
  • Fold in shredded cheddar cheese until evenly distributed.
  • Pour mixture into a greased baking dish and smooth the top.
  • Bake for 45 minutes or until the top is golden brown and slightly firm.
  • Let cool for 5–10 minutes before serving.

Notes

For extra flavor, mix in chopped jalapeños, green onions, or herbs. You can also add a crunchy breadcrumb topping for texture.
