  • 1 pound chicken breast, cut into bite-sized pieces
  • 4 ounces ham, sliced
  • 4 ounces Swiss cheese, sliced
  • 1 cup breadcrumbs
  • 2 large eggs, beaten
  • ½ cup flour
  • Salt and pepper to taste
  • Cooking spray

Preparation

  • Preheat your oven to 400°F (200°C). Gather all the ingredients, ensuring your chicken is cut into bite-sized pieces for even cooking.
  • Using a meat mallet, gently flatten each piece of chicken to about a quarter-inch thick.
  • On each flattened chicken piece, place a slice of ham and a slice of Swiss cheese.
  • Carefully roll the chicken around the ham and cheese, securing it with a toothpick if necessary.
  • Set up a breading station with bowls for flour, beaten eggs, and breadcrumbs.
  • Dredge each rolled chicken piece in flour, dip in the beaten eggs, and coat with breadcrumbs.
  • Arrange the coated rolls on a baking sheet with space between each piece.
  • Lightly spray the rolls with cooking spray and bake for 20-25 minutes until golden brown.
  • Remove from the oven and cool slightly before serving. Remember to take out the toothpicks before serving.

Notes

These bites can be stored in an airtight container in the fridge for up to four days. Freezing is an option as well; just ensure they’re well-wrapped to avoid freezer burn. Reheat at 350°F (175°C) for 10-15 minutes.
