Preparation

  • Start by gathering all your ingredients. Measure them accurately to ensure the best possible results. Preheat your oven to 350°F and line a cupcake pan with paper liners.
  • In a large mixing bowl, whisk together the flour, cornmeal, sugar, baking powder, and salt.
  • In a separate bowl, whisk the melted butter, eggs, buttermilk, and honey together until fully blended.
  • Gradually add the wet mixture to the dry ingredients. Stir gently until you see no dry flour specks left, but be cautious not to over-mix.
  • Spoon the batter into the prepared cupcake liners, filling each one about two-thirds full.
  • Place the cupcake pan in the preheated oven and bake for 15 to 18 minutes. Check doneness by inserting a toothpick into the center of a cupcake; it should come out clean.
  • Once baked, remove the pan from the oven and allow the cupcakes to cool in the pan for a few minutes before transferring them to a wire rack to cool completely.

Frosting
