Country Fried Pork Chops with Rich Gravy

Ingredients
  

  • 4 bone-in pork chops ½ inch thick
  • 1 cup all-purpose flour
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp salt
  • ½ tsp black pepper
  • 2 large eggs
  • ¼ cup milk
  • vegetable oil for frying
  • 4 slices bacon chopped
  • 3 tbsp bacon grease from cooked bacon
  • 3 tbsp all-purpose flour for gravy
  • 2 cups whole milk
  • salt and pepper to taste

Instructions
 

  • Mix flour, paprika, garlic powder, onion powder, salt, and pepper in a shallow bowl.
  • In another bowl, whisk eggs and milk.
  • Dredge pork chops in flour mixture, then egg mixture, then back in flour mixture for a double coating.
  • Heat vegetable oil in a skillet over medium-high. Fry pork chops 3-4 minutes per side until golden brown and cooked through. Drain on paper towels.
  • In the same skillet, cook bacon until crispy. Remove and set aside, reserving 3 tbsp bacon grease.
  • Whisk flour into bacon grease, cooking 1-2 minutes to form a roux. Gradually whisk in milk until smooth and thickened.
  • Season gravy with salt and pepper. Stir in cooked bacon pieces.
  • Serve pork chops hot, smothered with bacon gravy.

Notes

For extra flavor, add a pinch of cayenne to the flour mixture. Serve with mashed potatoes or biscuits for a true Southern feast.
