  • 1 pound fresh green beans, trimmed
  • 1 pound small potatoes, halved or quartered

Flavorings

  • 4 slices bacon
  • 2 tablespoons ranch seasoning mix
  • 2 cloves garlic, minced
  • 2 tablespoons butter Can be substituted with olive oil for a dairy-free option
  • Salt, to taste
  • Pepper, to taste

Preparation

  • Wash all your produce thoroughly. Trim the ends off the green beans and cut the small potatoes in half or quarters, ensuring they are about the same size for even cooking.

Cooking

  • In a large pot, bring water to a rolling boil. Add the halved potatoes and cook for about 10 minutes.
  • Add the trimmed green beans to the pot and cook for an additional 5 minutes until both the beans and potatoes are tender but still crisp.
  • Drain the mixture in a colander and set it aside.
  • In a skillet, cook the bacon over medium heat until crispy, about 5-7 minutes. Remove and crumble the bacon, leaving the grease in the skillet.
  • Add minced garlic to the bacon grease; sauté for approximately one minute until fragrant but not browned.
  • Add the cooked potatoes and green beans into the skillet with the garlic. Sprinkle with ranch seasoning, salt, and pepper; toss to coat.
  • Stir in the crumbled bacon and add butter, melting it into the mixture until heated through.

Serving

  • Transfer the dish to a serving bowl and enjoy warm as a side dish to any main course.

Notes

For a vegetarian version, omit the bacon or use a plant-based substitute. Consider freezing leftovers for up to 2-3 months.
