Ingredients
  

Cowboy Butter Chicken Pasta

  • 12 oz pasta penne or rotini
  • 1 lb chicken breast cut into bite-size pieces
  • 2 tbsp olive oil
  • 4 tbsp unsalted butter
  • 3 cloves garlic minced
  • 1 tsp paprika
  • ½ tsp chili flakes adjust to taste
  • 1 tsp dijon mustard
  • ½ cup heavy cream
  • ½ cup chicken broth
  • cup parmesan cheese grated
  • fresh parsley chopped, for garnish
  • salt and black pepper to taste

Instructions
 

  • Cook pasta according to package instructions until al dente. Drain and set aside.
  • Heat olive oil in a large skillet over medium heat. Season chicken with salt and pepper, then cook until golden and fully cooked. Remove and set aside.
  • In the same skillet, melt butter and sauté garlic until fragrant, about 30 seconds.
  • Stir in paprika, chili flakes, and Dijon mustard. Add chicken broth and cream, simmering for 3–4 minutes until slightly thickened.
  • Return chicken to the skillet, add cooked pasta and Parmesan cheese. Toss until well coated and heated through.
  • Garnish with fresh parsley and serve warm.

Notes

Add spinach or mushrooms for extra veggies, or increase chili flakes for a spicier kick.
