Ingredients
  

Cheese Mixture

  • 8 oz cream cheese, softened Make sure it's at room temperature.
  • 1 cup shredded cheddar cheese

Vegetables and Seasoning

  • ½ cup canned black beans, rinsed and drained
  • ½ cup corn, canned or frozen
  • ½ cup diced tomatoes, fresh or canned
  • ¼ cup red onion, finely chopped
  • ¼ cup jalapeños, diced, fresh or pickled Adjust based on spice preference.
  • ½ cup chopped fresh cilantro
  • 1 tbsp lime juice
  • 1 tsp garlic powder
  • 1 tsp ground cumin
  • to taste salt and black pepper Essential for flavor.

Coating

  • ½ cup crushed tortilla chips, for coating Use for outer coating.

Instructions
 

Preparation

  • Gather all ingredients and ensure the cream cheese is softened for easy mixing.
  • In a large bowl, blend the cream cheese and shredded cheddar cheese until smooth and creamy, about 2-3 minutes.
  • Stir in black beans, corn, diced tomatoes, red onion, and jalapeños carefully.
  • Add lime juice, garlic powder, cumin, salt, and black pepper. Mix until well combined.
  • Create a cylindrical shape with the mixture on a piece of plastic wrap and roll it tightly into a log.
  • Refrigerate the log for at least 2 hours until firm.

Coating & Serving

  • Unwrap the chilled cheese log and roll it in crushed tortilla chips until fully coated.
  • Transfer to a serving platter and garnish with fresh cilantro.
  • Serve with extra tortilla chips and vegetable sticks for dipping.

Notes

Experiment with different herbs, and for a spicier version, add more jalapeños or other peppers.
