Ingredients
  

For the Soup Base

  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 medium carrots, peeled and diced
  • 2 stalks celery, diced
  • 1 pound boneless, skinless chicken breasts
  • 6 cups chicken broth
  • 8 ounces egg noodles

For the Creamy Flavor

  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese Good quality cheese improves creaminess
  • ½ cup cream cheese, softened

Herbs and Seasoning

  • ½ teaspoon dried parsley
  • ½ teaspoon dried thyme

  • 6 slices bacon, cooked and crumbled For topping

Preparation

  • Gather and prepare all ingredients: chop the onion, mince the garlic, peel and dice the carrots, and chop the celery.

Cook the Base

  • Heat olive oil in a large pot over medium heat. Add chopped onion, minced garlic, diced carrots, and celery. Sauté until softened, about 5 minutes.

Cook the Chicken

  • Add chicken breasts and chicken broth to the pot. Bring to a boil, then reduce heat and simmer for about 15 minutes.

Shred the Chicken

  • Remove cooked chicken from pot, let it cool slightly, then shred into bite-sized pieces.

Add Cream and Cheeses

  • Stir in heavy cream, shredded cheddar cheese, and softened cream cheese into the pot. Keep heat low to allow cheese to melt.

Add Noodles and Seasonings

  • Bring to a gentle simmer and add egg noodles, dried parsley, dried thyme, salt, and pepper. Simmer until noodles are tender, about 10 minutes.

Incorporate Chicken

  • Return shredded chicken to the pot. Add crumbled bacon and stir to combine all ingredients.

Adjust Seasoning

  • Taste and adjust seasoning if needed.

Serve the Soup

  • Ladle the soup into bowls and garnish with chopped green onions or chives.

Notes
