  • 2 cups cooked chicken (shredded or diced)
  • 8 ounces cream cheese
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • ½ cup cooked beef bacon (can substitute with turkey bacon)
  • 2 tablespoons ranch seasoning mix
  • 68 small flour or corn tortillas

Optional Toppings

  • Chopped green onions
  • Diced tomatoes
  • Crisp lettuce
  • Fresh cilantro

Preparation

  • Gather all your ingredients to ensure a seamless cooking experience.
  • Shred or chop the cooked chicken if you haven’t done so already and warm your tortillas.

Cooking

  • Place the boneless chicken breasts into the slow cooker. Sprinkle the taco seasoning evenly over the chicken. Add cream cheese on top.
  • Cover the slow cooker and set it to low for 6-7 hours or high for 3-4 hours.
  • Once the chicken is cooked, shred it on a cutting board and mix in softened cream cheese.
  • Return the chicken mixture to the slow cooker and stir well. Allow it to cook on low for another 15-20 minutes.

Assembly

  • Warm tortillas in a skillet or microwave.
  • Scoop a generous amount of the chicken mixture onto each tortilla.
  • Sprinkle shredded cheeses and add optional toppings.

Serving

  • Arrange tacos on a platter, garnished with fresh cilantro.
  • Serve warm and enjoy!

Notes

For a lighter option, substitute Greek yogurt for cream cheese. You can also replace chicken with tofu for a vegan version.
