Ingredients
  

For the Bars

  • 1 cup unsalted butter, softened (2 sticks)
  • 1 cup granulated sugar
  • 1 cup packed brown sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 cup rolled oats
  • 1 cup dried cranberries, chopped
  • 1 cup white chocolate chips
  • 1 teaspoon baking powder
  • 0.5 teaspoon salt
  • Zest of 1 orange (optional) for added flavor

For the Frosting

  • 8 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1-2 tablespoons milk if needed for consistency
  • Additional dried cranberries and white chocolate for garnish

Preparation

  • Gather all your ingredients. Preheat your oven to 350°F (175°C) and line a 9x13 inch baking dish with parchment paper.

Cooking

  • In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until smooth (about 2-3 minutes). Beat in the eggs one at a time, followed by the vanilla extract.
  • In a separate bowl, whisk together the flour, oats, baking powder, and salt. Gradually add this dry mixture to the wet ingredients, mixing until just combined.
  • Fold in the chopped cranberries and white chocolate chips gently, ensuring they are evenly distributed.
  • Pour the batter into the prepared baking dish, spreading it evenly and tapping the dish to remove air bubbles.
  • Bake for about 25–30 minutes, until the edges are lightly golden and a toothpick inserted in the center comes out clean.
  • Remove from oven and let cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.

Frosting

  • In a mixing bowl, beat the softened cream cheese until smooth. Gradually add powdered sugar and vanilla extract. If too thick, add milk until desired consistency is reached.
  • Once the bars are completely cooled, spread the cream cheese frosting evenly over the top and garnish with additional cranberries and white chocolate.

Serving

  • Slice the bars into squares or rectangles and serve.

Notes

Store in an airtight container at room temperature for up to 3 days, or refrigerate for up to a week. For longer storage, freeze for up to three months.
