Ingredients
  

For the Cake

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup unsalted butter, softened Make sure it's at room temperature.
  • 1 cup sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup sour cream or Greek yogurt
  • 1 cup fresh or frozen cranberries Thawed if frozen.
  • ½ cup white chocolate chips or chunks

For the Frosting

  • 8 oz cream cheese, softened
  • 2 tablespoons unsalted butter, softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 2-3 tablespoons heavy cream or milk Adjust for desired consistency.

Instructions
 

Preparation

  • Gather all your ingredients and ensure that your butter and cream cheese are softened.
  • Preheat your oven to 350°F (175°C).
  • Grease a 9×9-inch square baking pan or line it with parchment paper.

Batter Mixing

  • In a medium bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt.
  • Using a hand or stand mixer, beat the softened butter and sugar together until fluffy and pale.
  • Add eggs one at a time, mixing well after each addition, then incorporate vanilla extract.
  • Add the dry ingredients to the wet mixture in three parts, alternating with the sour cream or Greek yogurt in two parts.
  • Gently fold in the cranberries and white chocolate chips.

Baking

  • Pour the prepared batter into the greased pan and smooth the top.
  • Bake for 35-40 minutes or until a toothpick inserted in the center comes out clean.
  • Let the cake cool completely in the pan.

Frosting

  • Beat the cream cheese and butter until smooth, gradually adding the powdered sugar and vanilla extract.
  • Mix in heavy cream or milk until preferred consistency is reached.
  • Spread the frosting evenly over the cooled cake.

Notes

For additional flavor, try adding orange zest into the batter. For dietary needs, substitute dairy ingredients with appropriate alternatives. Can freeze for up to three months.
