  • 1 sheet puff pastry, thawed
  • 8 ounces brie cheese, cut into small pieces
  • ½ cup cranberry sauce
  • 1 each egg, beaten (for egg wash)
  • to taste fresh thyme (optional for garnish)

Preparation

  • Preheat your oven to 400°F (200°C) and ensure your puff pastry is thawed.
  • On a lightly floured surface, roll out the puff pastry to a thickness of about 1/8 inch.
  • Cut the pastry into squares, approximately 3 inches on each side.
  • In the center of each pastry square, place a small piece of brie cheese and follow with about a teaspoon of cranberry sauce.
  • Fold over each corner of the pastry square toward the center and pinch the edges to seal.
  • Brush the tops with the beaten egg wash.
  • Line a baking sheet with parchment paper and place the bites on it, leaving space between each.
  • Bake for 15-20 minutes or until the pastries are puffed and golden brown.
  • Let the bites cool slightly and garnish with fresh thyme before serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. For best results, reheat in an oven rather than a microwave to avoid sogginess.
