  • ¼ cup orange juice

  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • 4 ounces brie cheese, rind removed and cut into small pieces
  • ¼ cup chopped fresh parsley
  • ½ cup panko breadcrumbs
  • 1 tablespoon butter, melted

Preparation

  • Preheat your oven to 375°F (190°C).
  • Gather all your ingredients and ensure your workspace is clean and organized.

Prepare the cranberry mixture

  • In a medium saucepan, heat the olive oil over medium heat.
  • Add the fresh cranberries and stir occasionally until they soften and burst, about 5 minutes.
  • Stir in the honey, orange juice, cinnamon, ginger, salt, and black pepper, cooking for another 3-4 minutes until slightly thickened.
  • Remove from heat and let the mixture cool.

Prepare the chicken

  • Cut a pocket in the center of each chicken breast, careful not to slice all the way through.

Stuff the chicken

  • Stuff each breast with equal amounts of brie cheese and a generous portion of the cooled cranberry mixture.
  • Secure the openings with toothpicks.

Sear the chicken

  • Heat a large oven-safe skillet over medium-high heat.
  • Sear the stuffed chicken breasts for 2-3 minutes on each side until golden brown.

Prepare the breadcrumb topping

  • In a small bowl, combine the panko breadcrumbs and melted butter, mixing well.

Bake the chicken

  • Place the breadcrumb mixture evenly over each stuffed chicken breast.
  • Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the internal temperature reaches 165°F (74°C).

Rest before serving

  • Allow the chicken to rest for 5 minutes before serving.

  • Sprinkle freshly chopped parsley over the chicken for a fresh finish.
