  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper To taste.

Preparation

  • Preheat your oven to 375°F.
  • Gather all ingredients and thaw the pork if frozen.

Making the Glaze

  • In a medium bowl, whisk together cranberry sauce, brown sugar, Dijon mustard, soy sauce, garlic powder, and onion powder.
  • Taste and adjust seasoning as needed.

Cooking the Pork

  • Season the pork tenderloin generously with salt and pepper.
  • Place in a baking dish and coat evenly with the glaze.
  • Bake for 25 to 30 minutes, checking that the internal temperature reaches at least 145°F.
  • Allow to rest for 5 minutes after removing from the oven.
  • Slice the pork into medallions and drizzle any remaining glaze over the top.

Notes

For added flavor, consider marinating the pork in the glaze for a few hours before baking. Garnish with fresh herbs like parsley or thyme for a pop of color.
