  • In another bowl, whisk together sugar, orange juice, vegetable oil, egg, and grated orange peel.
  • Pour the wet mixture into the dry ingredients, stirring gently until just combined.
  • Fold in the cranberries gently.
  • Fill a lined muffin tin about two-thirds full with the batter.
  • Bake for 18-20 minutes or until a toothpick comes out clean.
  • Allow to cool in the tin for five minutes before transferring to a wire rack.
  • Serve warm or at room temperature.
