Preparation

  • Preheat your oven to 375°F (190°C).
  • Cook the bacon in a skillet until crispy, then crumble it into small pieces.

Making the Filling

  • In a mixing bowl, combine softened cream cheese, crumbled bacon, garlic powder, onion powder, salt, and pepper. Stir until well incorporated.

Preparing Chicken

  • Cut pockets in each chicken breast, being careful not to cut all the way through.
  • Stuff the pockets with the cream cheese filling, packing it in well.
  • Crush the Doritos in a resealable bag until they have a breadcrumb-like consistency.

Coating and Baking

  • Coat each stuffed chicken breast generously in the crushed Doritos.
  • Drizzle olive oil in a baking dish, then place the coated chicken breasts inside.
  • Bake for 25-30 minutes until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).

Serving

  • Let the chicken rest for 5-10 minutes before slicing and serving hot.
