  • ¼ cup low carb chocolate chips Use sugar-free or keto-friendly options
  • 2 tbsp sweetener (like erythritol or stevia) Choose a sweetener that suits your taste
  • 1 tsp vanilla extract Can also use other flavor extracts

Preparation

  • Gather all your ingredients and ensure the cream cheese and butter are at room temperature.
  • In a mixing bowl, combine the softened cream cheese and butter until smooth and creamy, about 2-3 minutes.
  • Add the sweetener and vanilla extract, mixing until well combined.
  • Gently fold in the low carb chocolate chips, being careful not to break them.
  • Using a small cookie scoop or spoon, transfer the mixture into silicone molds or mini muffin liners.
  • Place the molds in the freezer for about 1-2 hours until solid.
  • Once solid, carefully pop them out of the molds, running warm water over the outside if needed.
  • Store in an airtight container in the freezer for up to a month.

Notes

For variety, consider adding a pinch of sea salt, melting dark chocolate on top, or protein powder for a more substantial snack. Ensure you store them properly for freshness.
