Ingredients
  

For the stuffed shells

  • 12 pieces jumbo pasta shells Cook according to package instructions
  • 2 cups cooked chicken, shredded Can use rotisserie chicken
  • ½ cup buffalo sauce Adjust according to spice preference
  • 1 cup ricotta cheese
  • 1 cup mozzarella cheese, shredded Plus extra for garnishing
  • 4 ounces cream cheese, softened
  • 1 teaspoon garlic powder
  • ¼ cup ranch dressing
  • ¼ cup green onions, chopped For garnish

Preparation

  • Preheat your oven to 375°F (190°C).
  • Gather all your ingredients and tools, including a large mixing bowl and a greased baking dish.

Cooking the Pasta

  • Boil water in a large pot and cook the jumbo pasta shells for about 10-12 minutes until al dente.
  • Drain the pasta shells and set them aside to cool.

Making the Filling

  • In a large mixing bowl, combine shredded chicken, buffalo sauce, ricotta cheese, mozzarella cheese, cream cheese, and garlic powder.
  • Stir until well combined and the mixture is creamy.

Assembling the Shells

  • Gently stuff each pasta shell with the buffalo chicken filling.
  • Arrange the stuffed shells in the greased baking dish.

Baking

  • Cover the baking dish with aluminum foil and bake for about 25 minutes.
  • Remove the foil halfway to allow the cheese to become bubbly and golden.

Garnishing and Serving

  • After baking, garnish with extra mozzarella cheese and chopped green onions before serving.

Notes

For best results, do not overcook the pasta shells. Adjust seasonings to your preference. The ranch dressing balances the buffalo sauce nicely.
