Preparation

  • Wash and peel the potatoes, then dice them into evenly sized cubes.
  • Chop the onion finely and mince the garlic cloves.
  • Gather all ingredients to streamline the cooking process.

Cooking Base

  • Heat olive oil in a large pot over medium heat.
  • Add chopped onion and minced garlic, and sauté for about 3-5 minutes until the onion is translucent.

Combine Ingredients

  • Add diced potatoes and Cajun seasoning, stirring well to coat the potatoes with spices.
  • Sauté for another 2 minutes, stirring frequently.

Simmer

  • Pour in vegetable broth and bring to a boil.
  • Reduce heat, cover the pot, and let it simmer for 15-20 minutes until potatoes are soft.

Mash and Cream

  • Once the potatoes are tender, remove the lid and mash some of them to create a creamy texture.
  • Slowly stir in the heavy cream and heat for an additional 5-10 minutes, avoiding boiling.

Season and Serve

  • Taste and adjust seasoning with salt and pepper as needed.
  • Ladle soup into bowls and garnish with chopped green onions.

Notes
