Ingredients
  

For the Parfait Shots

  • 1 pound strawberries, hulled and sliced
  • 1 pound blueberries
  • 1 pound raspberries
  • 1 cup heavy cream
  • 1 cup mascarpone cheese
  • ½ cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup sponge cake or ladyfingers, crumbled
  • ¼ cup peppermint candies, crushed (optional) For a festive touch
  • as needed fresh mint leaves for garnish

Instructions
 

Preparation

  • Prepare ingredients by washing and hulling the strawberries, slicing them and setting aside. Rinse the blueberries and raspberries ensuring they are dry.
  • Measure out heavy cream, mascarpone cheese, powdered sugar, and vanilla extract.

Whipping Cream

  • In a medium bowl, whip the heavy cream on medium speed until soft peaks begin to form, about 3-5 minutes.

Mixing Base

  • In another bowl, combine mascarpone cheese, powdered sugar, and vanilla extract. Stir until smooth.
  • Gently fold the whipped cream into the mascarpone mixture using a spatula.

Assembly

  • Begin layering parfaits by adding a layer of crumbled sponge cake or ladyfingers at the bottom of small glasses.
  • Add a generous layer of mixed berries on top of the sponge cake.
  • Spoon the creamy mascarpone mixture over the top of the berries, spreading it evenly.
  • Repeat the layering process until glasses are filled, finishing with a layer of the mascarpone mixture.
  • Sprinkle crushed peppermint candies on top for a festive touch.
  • Refrigerate parfait shots for at least 1 hour before serving. Just before serving, garnish with fresh mint leaves.

Notes

Store in the refrigerator for 2-3 days. Avoid overwhipping cream and soggy layers by keeping the elements separate until serving.
