Preparation

  • Start by soaking your butter beans overnight in plenty of water. Drain the soaked beans before using them.

Cooking

  • In a pot over medium heat, add a splash of oil and sauté the chopped onion until translucent, about 5-7 minutes.
  • Add the minced garlic and grated ginger, stirring for an additional minute until fragrant.
  • Stir in the curry powder and cumin, allowing the spices to bloom in the hot oil.
  • Add the soaked butter beans into the pot, mixing well to coat them in the onion and spice mixture.
  • Pour in the can of coconut milk, stirring well to combine.
  • Reduce the heat to a gentle simmer and allow to cook uncovered for about 20-25 minutes, or until the butter beans are tender.
  • Once the beans are soft and the sauce is creamy, season with salt to taste.

Serving

  • Before serving, sprinkle fresh cilantro on top and enjoy warm.

Storage
