  • 1 teaspoon chili powder Adjust based on spice preference.
  • ½ cup crumbled cotija cheese Feta can be used as an alternative.
  • to taste salt Start with a small amount and adjust as needed.
  • to garnish chopped cilantro Adds freshness and visual appeal.

Preparation

  • Gather all ingredients and roast the corn until slightly charred.
  • In a large bowl, combine the roasted corn with mayonnaise and stir gently to coat evenly.
  • Squeeze lime juice into the mixture and stir well for even distribution.
  • Sprinkle in chili powder and mix until all corn is evenly covered.
  • Add crumbled cotija cheese and mix for texture and flavor.
  • Taste and add salt as needed, keeping in mind that cotija cheese adds saltiness.
  • Let the mixture sit for about 10 minutes for flavors to meld.
  • Before serving, garnish with chopped cilantro.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Can be reheated in a microwave for 30 seconds to a minute.
