Pasta Ingredients

  • 8 oz pasta (fettuccine or spaghetti)
  • 4 oz prosciutto, diced
  • 1 cup fresh peas can be frozen if out of season
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Preparation

  • Gather and measure all your ingredients.
  • Dice the prosciutto, mince the garlic, and prep fresh peas if using.
  • Bring a pot of salted water to boil for the pasta.

Cooking

  • Add the pasta to the boiling water and cook according to package instructions until al dente, about 8-10 minutes.
  • Once cooked, drain the pasta but reserve about 1 cup of the pasta water.
  • In a large skillet over medium heat, heat the olive oil for a minute before adding the minced garlic.
  • Sauté the garlic for 1-2 minutes until fragrant.
  • Add the diced prosciutto and sauté for 3-4 minutes until crispy.
  • Add the fresh (or frozen) peas and sauté for another 2-3 minutes.
  • Pour in the heavy cream and bring it to a gentle simmer.
  • Stir in the grated Parmesan cheese and mix until melted, adjusting consistency with reserved pasta water as needed.
  • Add the cooked pasta, tossing it in the creamy sauce to coat thoroughly.
  • Transfer to bowls and garnish with fresh parsley before serving.

Notes

This dish is easily customizable with different vegetables or proteins. For a lighter version, consider using a low-fat cream option. Recommended to serve with a salad and white wine.
