  • Begin by gathering and prepping all your ingredients. Dice the onion, celery, and carrot, and mince the garlic.

Cooking the Base

  • In a large pot, melt the butter over medium heat. Add your diced onion, celery, and carrot. Sauté these vegetables for about 5-7 minutes until they begin to soften.

Adding Aromatics

  • Stir in the minced garlic, caraway seeds, and dried thyme. Cook for an additional 1-2 minutes.

Preparing the Broth

  • Pour in the chicken or vegetable broth and bring the mixture to a simmer.

Incorporating Meats and Sauerkraut

  • Add the chopped corned beef and sauerkraut to the pot. Allow everything to simmer together for 15-20 minutes.

Creating the Creamy Base
