  • 1 cup fresh spinach, chopped Fresh baby spinach or cooked and chopped frozen spinach works, just drain the frozen.
  • ½ cup grated Parmesan cheese For a non-dairy option, consider using nutritional yeast.
  • ¼ teaspoon garlic powder
  • ¼ teaspoon black pepper

For the Pinwheels

  • 4 large tortillas Use whole wheat or gluten-free tortillas if preferred.

Preparation

  • Start by gathering all your ingredients.
  • In a mixing bowl, combine the softened cream cheese, chopped spinach, grated Parmesan cheese, garlic powder, and black pepper. Stir well until smooth.
  • Spread a generous layer of the filling evenly over each tortilla.
  • Roll each tortilla tightly from one edge to the other, ensuring it's compact.
  • Wrap each roll in plastic wrap and refrigerate for at least one hour.
  • Once chilled, unwrap, and slice each roll into 1-inch thick pinwheels.
  • Arrange pinwheels on a serving platter and garnish as desired.

Notes

These pinwheels can be made a day in advance and stored in the refrigerator. They also freeze well for up to 2 months.
