Preparation

  • Gather all your ingredients for ease while cooking.
  • Trim any excess fat from the chicken breasts and pat dry.

Cooking

  • Heat olive oil in a large skillet over medium heat.
  • Season chicken breasts with salt and pepper and add to the skillet.
  • Cook chicken for 5–7 minutes on each side until golden brown and cooked through.
  • Remove chicken and set aside. Add minced garlic to the skillet and sauté for 1 minute.
  • Pour in chicken broth and deglaze the pan, scraping up any brown bits.
  • Add heavy cream, sun-dried tomatoes, Italian seasoning, and spinach, stirring to combine. Simmer for 3–5 minutes.
  • Return the chicken to the skillet, spooning sauce over it to coat well.
  • Serve hot, garnished with extra sun-dried tomatoes or spinach as desired.

Notes

Allow the sauce to simmer for thickness. Add white wine when deglazing for extra flavor. Adjust seasonings to enhance taste, and feel free to customize with various herbs or spices as desired.
