  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 2 cups mixed vegetables (like zucchini, bell peppers, and green beans) You can use whatever vegetables you have on hand.
  • 1 cup heavy cream or coconut milk Coconut milk for a dairy-free option.
  • 1 teaspoon dried thyme
  • to taste Salt and pepper Adjust according to preference.

For Garnish

Preparation

  • Gather all your ingredients and tools. Chop your vegetables and mince the garlic.
  • In a large pot, heat the olive oil over medium heat until it shimmers.
  • Add the chopped onion, diced carrots, diced celery, and minced garlic. Sauté for about 5-7 minutes until the vegetables are tender and the onion is translucent.
  • Pour in the vegetable broth and raise the heat to bring the mixture to a boil.
  • Once boiling, add in the mixed vegetables. Stir gently, then lower the heat and let it simmer for about 10-15 minutes.
  • Stir in your choice of heavy cream or coconut milk. Taste and season with salt, pepper, and dried thyme.
  • Allow to simmer for another 5 minutes on low heat.
  • Ladle the soup into bowls and garnish with fresh herbs.
