  • 2 medium zucchinis washed and sliced into thin strips
  • 1 cup grated Parmesan cheese
  • 1 cup breadcrumbs regular or gluten-free
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • salt and pepper to taste
  • 2 large eggs beaten

Instructions
 

  • Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  • Wash zucchinis and slice them into thin, even strips for uniform baking.
  • In a bowl, combine Parmesan cheese, breadcrumbs, garlic powder, onion powder, salt, and pepper. Mix well.
  • In another bowl, beat the eggs thoroughly to create an egg wash.
  • Dip each zucchini strip into the egg wash, then roll it in the breadcrumb mixture until well coated.
  • Place coated zucchini strips on the prepared baking sheet, spacing them evenly to prevent steaming.
  • Bake for 25–30 minutes or until fries are golden brown and crispy, flipping halfway through if desired.
  • Remove from oven, let cool slightly, and serve warm with marinara, ranch, or garlic aioli dip.

Notes

For extra flavor, add dried herbs like oregano or thyme to the breadcrumb mixture. To make it gluten-free, use almond flour or gluten-free breadcrumbs. For a vegan version, substitute eggs with flaxseed or chia egg and use nutritional yeast instead of Parmesan.
