  • 2 large eggs Beaten for coating.
  • ¼ cup mayonnaise For the dipping sauce.
  • 2 tablespoons sweet chili sauce Adds sweetness to the sauce.
  • 1 tablespoon sriracha Adjust for preferred spice level.
  • to taste salt and pepper For seasoning.
  • as needed Oil for frying Use enough to cover the bottom of the pan.

Preparation

  • Cut your salmon fillets into bite-sized pieces.
  • In a bowl, mix the all-purpose flour with salt and pepper.
  • In another bowl, crack the two large eggs and beat them until well mixed.
  • In a third bowl, place the panko breadcrumbs.

Coating

  • Dip each piece of salmon into the flour mixture, then into the beaten eggs, and finally coat with panko breadcrumbs.

Cooking

  • Heat oil in a large pan over medium heat.
  • Fry the salmon bites for about 3-4 minutes on each side or until they are golden brown.

Dipping Sauce

  • Mix mayonnaise, sweet chili sauce, and sriracha in a small bowl.

Serving

  • Transfer cooked bites to a paper towel-lined plate to drain excess oil.
  • Serve hot with the dipping sauce.

Notes

Store leftovers in an airtight container for up to 2 days. For the best texture, reheat in an oven at 375°F for about 10-15 min.
