Crispy Garlic Chicken Bites

  • 1 lb boneless, skinless chicken breasts cut into bite-sized pieces
  • 1 cup all-purpose flour
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • ½ tsp salt
  • ½ tsp black pepper
  • 2 large eggs beaten
  • 1 cup Panko breadcrumbs
  • oil for frying vegetable or canola oil

Peppercorn Ranch Dip

  • 1 cup mayonnaise
  • ½ cup sour cream
  • ¼ cup buttermilk
  • 1 tsp dried dill
  • 1 tsp garlic powder (for ranch)
  • 1 tsp onion powder (for ranch)
  • ½ tsp crushed black peppercorns
  • 1 tbsp lemon juice freshly squeezed
  • salt to taste

Instructions
 

  • Cut chicken breasts into bite-sized pieces and set aside. Prepare coating and dipping ingredients in separate bowls.
  • In a large bowl, mix flour, garlic powder, onion powder, paprika, salt, and black pepper.
  • Set up three bowls: seasoned flour, beaten eggs, and Panko breadcrumbs. Dredge each chicken piece in flour, dip in egg, then coat with breadcrumbs.
  • Heat oil in a skillet over medium heat. Fry chicken bites in batches for 4–5 minutes per side until golden brown and crispy. Internal temperature should reach 165°F (74°C).
  • Drain on paper towels to remove excess oil and keep warm.
  • In a bowl, combine mayonnaise, sour cream, buttermilk, dill, garlic powder, onion powder, crushed peppercorns, lemon juice, and salt. Mix well to form the ranch dip.
  • Serve the crispy chicken bites warm with the creamy peppercorn ranch on the side for dipping.

Notes

For extra crunch, let the breaded chicken rest for 5 minutes before frying. Add cayenne pepper for a spicy kick or grated Parmesan to the breadcrumbs for a cheesy version. Best served fresh but can be reheated in the oven for 10 minutes at 375°F (190°C).
