  • In a pot, bring 4 cups of water (or broth) to a boil and add salt to taste.
  • Gradually stir in the polenta and reduce heat to low, cooking while stirring frequently for about 30 minutes until thickened.
  • Pour the cooked polenta into a greased baking dish, smoothing the top evenly.
  • Let the polenta cool completely at room temperature, then refrigerate for at least two hours.
  • Preheat your oven to 425°F (220°C).
  • Cut the chilled polenta into fry shapes.
  • Place the cut fries on a lined baking sheet, drizzle with olive oil and seasonings, then toss to coat.
  • Bake for 25-30 minutes, turning halfway for even crispness.
  • Remove from the oven, let cool slightly, and serve hot.
