Ingredients
  

Main Dish

  • 1 lb gnocchi store-bought or homemade
  • 2 tbsp olive oil
  • 4 cups fresh spinach about 120 g
  • 4 oz feta cheese crumbled
  • 2 cloves garlic minced
  • salt to taste
  • black pepper to taste
  • 1 tsp red pepper flakes optional, for heat

Instructions
 

  • Bring a large pot of salted water to a boil. Add gnocchi and cook 2–3 minutes, until they float. Remove with a slotted spoon.
  • Heat olive oil in a frying pan over medium-high heat. Add gnocchi and cook 4–6 minutes, stirring, until golden and crispy.
  • Reduce heat to medium. Add minced garlic and sauté 1 minute until fragrant.
  • Stir in spinach and cook 2–3 minutes until wilted. Add in salt, pepper, and optional red pepper flakes.
  • Remove from heat and stir in crumbled feta cheese.
  • Serve hot, garnished with extra feta or a drizzle of olive oil if desired.

Notes

Best enjoyed fresh, but leftovers can be stored up to 3 days in the fridge. Reheat in a skillet for crispiness. For a twist, add cherry tomatoes, sun-dried tomatoes, or toasted pine nuts.
