Main ingredients

  • 2 cups frozen hashbrowns (thawed)
  • ½ lb sausage (pork or turkey)
  • ½ cup shredded cheese (cheddar or mozzarella)
  • ¼ cup breadcrumbs
  • 1 egg egg

  • black pepper to taste

  • 1 tbsp oil for frying

Instructions
 

  • In a skillet over medium heat, cook the sausage (pork or turkey), breaking it apart, until browned (about 5-7 minutes). Drain excess fat.
  • In a large bowl, combine the thawed hashbrowns, cooked sausage, shredded cheese, breadcrumbs, egg, salt, and pepper. Mix until well combined.
  • Shape the mixture into bite-sized balls (about 1 inch in diameter), pressing them firmly so they hold together.
  • Heat oil in a clean skillet over medium heat (just enough to coat the bottom).
  • Fry the bites in batches, spacing them apart. Cook each side about 4-5 minutes or until golden brown and crispy.
  • Remove the cooked bites and drain on paper towels to absorb excess oil. Repeat with remaining pieces.
  • Serve warm, optionally with a dipping sauce.

Notes

You can make variations — use gluten-free breadcrumbs, dairy-free cheese, or different sausage types. These bites store up to 3 days in the refrigerator, or can be frozen (single layer, then bagged) for up to 2 months.
