Preparation

  • Preheat your oven to 400°F (200°C).
  • Wash the baby potatoes thoroughly under cold running water and dry them with a clean kitchen towel or paper towels.

Cooking

  • In a large mixing bowl, combine the dry baby potatoes with olive oil, minced garlic, chopped herbs, salt, and pepper. Toss well to coat the potatoes evenly.
  • Prepare a large baking sheet lined with parchment paper or lightly greased with olive oil. Spread the seasoned baby potatoes in a single layer.
  • Roast in the preheated oven for 30-40 minutes, flipping the potatoes halfway through for even crispiness.
  • Check for doneness around the 30-minute mark. The potatoes should have a crispy outer layer and be tender inside.
  • Remove from the oven, taste for seasoning, and adjust with more salt or herbs if desired.
  • Allow the potatoes to cool for a few minutes before serving.
