Crispy Peach Cobbler Egg Rolls

Ingredients
  

For the Filling

  • 2 cups peaches, peeled and sliced Fresh or canned peaches (drained) can be used.
  • ½ cup sugar Honey or agave syrup can be used as substitutes.
  • 1 teaspoon cinnamon Add more if desired.
  • 1 tablespoon lemon juice Freshly squeezed is best.
  • 1 tablespoon cornstarch Acts as a thickener for the filling.

For the Egg Rolls

  • 10-12 pieces egg roll wrappers Gluten-free wrappers can be used.
  • Powdered sugar for dusting (optional) Adds a nice finish.

Instructions
 

Preparation

  • Wash and peel the peaches, then slice them into bite-sized pieces.
  • In a large bowl, combine sliced peaches with sugar, cinnamon, lemon juice, and cornstarch. Let the mixture sit for about 10 minutes.

Assembly

  • Lay an egg roll wrapper flat and spoon a generous amount of peach filling in the center.
  • Fold the bottom corner over the filling, fold in the sides, and roll tightly from the bottom. Seal with a bit of water.

Cooking

  • Heat oil in a deep fryer or skillet over medium heat until hot.
  • Fry egg rolls for 3-4 minutes on each side until golden brown. Alternatively, brush with oil and bake at 400°F (200°C) for 15-20 minutes.

Serving

  • Remove from heat and drain on paper towels. Dust with powdered sugar before serving.
  • Serve warm with vanilla ice cream or whipped cream if desired.

Notes

To store leftovers, refrigerate in an airtight container for up to 3-4 days or freeze for up to 3 months. Reheat in the oven at 350°F (175°C) for 10-15 minutes.
