  • 8 ounces boneless salted cod, soaked and shredded Soaked for at least 24 hours to reduce saltiness.
  • 1 cup all-purpose flour Use gluten-free flour for a gluten-free option.
  • 2 teaspoons baking powder
  • 1 teaspoon granulated garlic
  • ½ teaspoon black pepper
  • ¼ teaspoon cayenne pepper Adjust for desired heat.
  • ¼ cup chopped green onions Can be substituted with regular onions.
  • ¼ cup chopped parsley

Preparation

  • Soak the salted cod in water for at least 24 hours, changing the water several times to remove excess salt. Drain and shred the fish.
  • In a mixing bowl, combine the flour, baking powder, granulated garlic, black pepper, and cayenne pepper.
  • Incorporate the shredded saltfish, chopped green onions, and parsley into the mixture, folding gently.
  • Gradually add water until the mixture forms a thick batter that holds together.

Cooking

  • Heat oil in a frying pan over medium heat until it shimmers.
  • Spoon batter into the hot oil, frying in batches for about 3-4 minutes, turning until golden brown.
  • Remove fritters with a slotted spoon and drain on paper towels.
  • Serve hot with dipping sauces.

Notes

Store leftovers in an airtight container for up to 3 days. For best results, reheat in a preheated oven.
