  • 2 cloves garlic, minced

Preparation

  • Wash the zucchinis and dry them with a towel. Gather all necessary ingredients, a clean kitchen towel, and a mixing bowl.
  • Grate the zucchinis into fine shreds using a box grater or food processor.
  • Place the grated zucchini in the center of a clean kitchen towel and twist it to squeeze out excess moisture.
  • In a large mixing bowl, combine the squeezed zucchini with Greek yogurt, flour (or almond flour), Parmesan cheese, egg, minced garlic, chopped herbs, salt, and pepper. Stir until well incorporated.

Cooking

  • Heat a skillet over medium heat and add olive oil to cover the bottom.
  • Scoop spoonfuls of the mixture into the hot skillet, flattening them slightly to form fritters. Leave space between them.
  • Cook for 3-4 minutes on each side until golden brown and crispy, adjusting the heat as necessary.
  • Transfer cooked fritters to a plate lined with paper towels and repeat with the remaining mixture.
  • For a healthier twist, preheat an air fryer to 400°F, place fritters in a single layer, and cook for 10-12 minutes, flipping halfway through.

Serving

  • Serve the fritters warm with a dipping sauce or topping of your choice.

Notes

Store leftovers in an airtight container for up to 3-4 days in the fridge. You can freeze cooked fritters for up to 2 months, reheating in a hot skillet for best texture.
