Crockpot Cheeseburger Soup

- 1 lb ground beef Can substitute with ground turkey or chicken.
- 1 medium onion, chopped
- 3 cups beef broth Make sure it's gluten-free if necessary.
- 3 cups potatoes, diced
- 1 cup carrots, diced
- 1 cup celery, chopped
- 8 oz cream cheese Can use low-fat or non-dairy cream cheese.
- 2 cups shredded cheddar cheese Alternatives include pepper jack or mozzarella.
- 1 tsp garlic powder

Preparation
- Start by gathering all your ingredients and clean and chop your vegetables.
Browning the Meat
- In a skillet over medium heat, brown the ground beef along with the chopped onion for about 5-7 minutes. Drain the fat afterward.
Combining Ingredients
- Transfer the cooked ground beef and onion to the crockpot.
- Add in the diced potatoes, carrots, and chopped celery.
- Pour in the beef broth.
- Add garlic powder and season with salt and pepper to taste, then stir to combine.
Cooking the Soup
- Cook on low for 7-8 hours or on high for 4-5 hours until vegetables are tender.
Finishing Touches
- About 30 minutes before serving, add cream cheese and shredded cheddar cheese. Stir until fully melted and combined.
- Allow to cook for an additional 30 minutes.
