  • 1 each onion, quartered Adds sweetness and depth to the flavor.
  • 4 cloves garlic, minced Adjust according to your garlic preference.
  • 1 cup beef broth Use homemade or low-sodium for a healthier option.
  • 2 tablespoons Worcestershire sauce Ensure it's gluten-free if necessary.
  • 1 tablespoon dried thyme Fresh thyme can also be used for a more intense flavor.
  • Salt and pepper to taste

Preparation

  • Start by prepping your vegetables. Chop the carrots and potatoes into bite-sized pieces and quarter the onion.

Searing the Meat

  • In a large skillet, heat a bit of oil over medium-high heat. Season the beef chuck roast liberally with salt and pepper.
  • Sear the roast on all sides until browned, approximately 3-4 minutes per side.

Layering Ingredients

  • Place the chopped carrots, potatoes, and quartered onion at the bottom of the crockpot.
  • Carefully transfer the seared beef roast on top of the layered vegetables in the crockpot.

Adding Liquid and Seasoning

  • Pour the beef broth and Worcestershire sauce over the roast, then add the minced garlic and dried thyme.
  • Taste the liquid and adjust seasoning with additional salt and pepper if needed.

Cooking

  • Cover and set the crockpot to cook on low for 8-10 hours or high for 4-5 hours.
  • Check for doneness; the meat should be fork-tender and easily shreddable.

Serving

  • Transfer the meat to a cutting board, let it rest, then slice or shred it. Serve with cooked vegetables and spoon some broth over the top.

Notes

For a thicker gravy, remove some cooking liquid, mix with cornstarch, and return to the pot under high heat. Ensure proper layering of vegetables beneath the meat.
