  • 4 medium potatoes, diced
  • 1 pound sausage (Italian or smoked), sliced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 teaspoon thyme
  • 1 teaspoon pepper

  • 1 cup heavy cream Optional, for creaminess
  • Chopped green onions for garnish

Preparation

  • Dice the potatoes into bite-sized pieces, slice the sausage into rounds, chop the onion finely, and mince the garlic.

Cooking

  • In your Crockpot, combine the diced potatoes, sliced sausage, chopped onion, minced garlic, chicken broth, thyme, pepper, and salt.
  • Give everything a good stir to ensure all the ingredients are well combined.
  • Cover your Crockpot and set it to cook on low for 6-8 hours or on high for 3-4 hours.
  • After the cooking time is up, check if the potatoes are tender.
  • If desired, stir in the heavy cream and let it cook for an additional 30 minutes.
  • Taste and adjust seasoning before serving.
  • Ladle the soup into bowls and garnish with chopped green onions.

Notes

For added flavor, sauté garlic and onion before adding to the Crockpot. You can substitute sausage with turkey sausage, tofu, or make a vegetarian version using lentils or chickpeas.
