  • 2 large cucumbers Choose English or Persian cucumbers for best flavor.

For the Filling

  • 1 cup hummus Store-bought or homemade.
  • ¼ cup cherry tomatoes, diced
  • ¼ cup bell pepper, diced Alternatives: diced radishes or olives.
  • 1 tablespoon olive oil For drizzling.
  • to taste Salt and pepper Adjust for personal preference.

Preparation

  • Gather all your ingredients. Wash the cucumbers thoroughly and pat them dry.
  • Slice the cucumbers into thick rounds, approximately 1-inch thick.
  • Scoop out the center of each cucumber slice gently.
  • Spoon hummus generously into each cucumber cup.
  • Top with diced cherry tomatoes and bell peppers.
  • Drizzle olive oil over the topped cucumber cups.
  • Season with salt and pepper to taste.
  • You can serve them immediately or chill them in the refrigerator for 30 minutes before serving.
  • Optional: Garnish with fresh herbs before serving.
