Main Ingredients

  • 1 pound shrimp, peeled and deveined Use fresh shrimp for best results.
  • 2 cups cucumber, diced Pickling or English cucumbers work well.
  • ½ cup red onion, diced
  • ¼ cup fresh cilantro, chopped Can be replaced with parsley if desired.

Dressing Ingredients

  • ¼ cup lime juice Freshly squeezed for best flavor.
  • 1 tablespoon olive oil
  • to taste Salt and pepper Adjust according to your preference.

Instructions
 

Preparation

  • Gather all your ingredients.
  • Peel and devein the shrimp if it hasn’t been done already.
  • Dice the cucumbers and red onion, and chop the fresh cilantro.

Cooking

  • Bring a pot of water to a boil.
  • Add the shrimp, cooking for about 2-3 minutes until they turn pink.
  • Drain the shrimp and let them cool.

Mixing

  • In a large mixing bowl, combine the cucumber, red onion, and cilantro.
  • Once the shrimp have cooled, add them to the bowl.

Dressing

  • In a separate bowl, whisk together lime juice, olive oil, salt, and pepper.
  • Pour the dressing over the salad and gently toss to combine.

Chilling

  • Cover and chill for at least 30 minutes before serving.

Notes

Best served chilled. Avoid freezing, as fresh vegetables won't hold up well.
