Main Ingredients

  • 1 ¼ lbs chicken breast (diced small)
  • 12 oz gluten-free farfalle
  • 2 cups chicken broth
  • 2 cups dairy-free heavy cream
  • 2 cups chopped spinach
  • 8 oz dairy-free parmesan (shredded)

Seasonings and Flour

  • 1 ¾ tsp sweet smoked paprika
  • 1 ½ tsp oregano
  • 2 tsp Italian seasoning
  • 2 tsp garlic powder
  • ½ tsp thyme
  • ½ tsp black pepper
  • 1 tsp salt
  • 1 ⅔ tbsp gluten-free 1:1 flour

Other Ingredients

  • 4 tbsp dairy-free butter
  • 2 tbsp minced onion
  • 2 tbsp pasta water (as needed) Use to thin the sauce if necessary.

Instructions
 

Preparation

  • Gather all your ingredients and dice the chicken breast into small pieces.
  • Measure out the seasonings: sweet smoked paprika, oregano, garlic powder, thyme, black pepper, and salt.

Cooking

  • In a large pot, boil water and cook the gluten-free farfalle according to package directions until al dente. Drain the pasta, but reserve a bit of the pasta water.
  • In a small bowl, combine the diced chicken with the mixed seasonings and toss to coat evenly.
  • Heat olive oil over medium heat in a large skillet. Add the seasoned chicken and sear for 3 to 4 minutes per side, until cooked through. Set aside.
  • Add dairy-free butter to the same skillet. After it melts, add the minced onion, Italian seasoning, garlic powder, and salt. Simmer for about a minute.
  • Sprinkle gluten-free flour into the skillet and mix well to thicken the sauce.
  • Slowly add chicken broth and dairy-free heavy cream, whisking until smooth. Stir in the chopped spinach and simmer for 3 to 4 minutes.
  • Once the sauce thickens, add the dairy-free parmesan cheese and stir until melted.
  • Add the cooked farfalle to the sauce, tossing gently to coat. If the sauce is too thick, add reserved pasta water as needed.
  • Return the seared chicken to the skillet, stir to combine evenly, and serve hot.

Notes

This dish is versatile; feel free to add seasonal veggies or substitute proteins according to your dietary needs. For vegan options, replace chicken with tofu or plant-based proteins.
