  • Start by gathering all the ingredients listed. Rinse the pitted dates to ensure they are clean, and chop the walnuts into smaller pieces if desired for easier blending.
  • In a food processor, combine the pitted dates and walnuts. Blend until they form a finely chopped mixture. You want a sticky consistency that binds well together.
  • Add the rolled oats, almond butter, honey, chia seeds, and vanilla extract to the mixture. Ensure everything is well-incorporated to create a sticky, thick blend.
  • Pulse the mixture a few times until it’s well combined. Check for a sticky texture that can hold its shape when pressed.
  • Line a square dish or bowl with parchment paper for easy removal. Make sure there’s enough overhang for easy lifting once set.
  • Transfer the mixture to the lined bowl and press it down firmly using a spatula or your hands. Even out the top to ensure consistent thickness.
  • Place it in the refrigerator and let it chill for at least 30 minutes. This setting time is essential for the mixture to firm up.
  • Once firm, remove the mixture from the bowl using the parchment overhang. Cut into squares or bars. Enjoy them immediately or store for later.

Notes

These energy bowls can be stored in an airtight container in the refrigerator for up to one week. They can also be frozen for up to three months.
