Chocolate Cake Batter

  • 1 ¾ cups all-purpose flour
  • ¾ cup unsweetened cocoa powder
  • 2 cups granulated sugar
  • 1 ½ tsp baking powder
  • 1 ½ tsp baking soda
  • 1 tsp salt
  • 2 large eggs room temperature
  • 1 cup whole milk
  • ½ cup vegetable oil
  • 2 tsp vanilla extract
  • 1 cup boiling water to intensify chocolate flavor

Instructions
 

  • Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  • In a large bowl, whisk together flour, cocoa powder, sugar, baking powder, baking soda, and salt.
  • Add eggs, milk, oil, and vanilla to the dry ingredients. Mix until smooth and well combined.
  • Gradually stir in boiling water. The batter will be thin — this makes the cake extra moist.
  • Pour the batter evenly into prepared pans.
  • Bake for 30–35 minutes or until a toothpick inserted into the center comes out clean.
  • Let cakes cool in pans for 10 minutes, then transfer to a wire rack to cool completely.
  • Frost with your favorite chocolate frosting once completely cooled, then slice and serve.

Notes

Use high-quality cocoa powder for the best flavor. For added depth, replace some boiling water with brewed coffee. Pair slices with whipped cream, ice cream, or fresh berries. This cake can be made ahead and frozen for up to 3 months.
