For the Toffee Sauce

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and grease and flour your chosen baking dish.
  • Chop the Medjool dates and measure out the boiling water.

Cook the Base

  • In a heatproof bowl, combine the chopped Medjool dates with boiling water and let it sit for about 10 minutes to soften.

Cream Butter and Sugar

  • In a separate bowl, beat together the unsalted butter and brown sugar until light and creamy.

Incorporate the Eggs

  • Add eggs one at a time, mixing well after each addition.

Add Vanilla

  • Stir in the vanilla extract.

Mix in Date Mixture

  • Gradually fold the softened date mixture into the butter mixture.

Combine Dry Ingredients

  • In another bowl, whisk together the all-purpose flour, baking powder, and salt, then gradually whisk this dry mixture into the wet ingredients.

Bake the Pudding

  • Pour the batter into the prepared baking dish and bake for 30-35 minutes, or until a toothpick comes out clean.

Prepare the Toffee Sauce

  • In a saucepan over medium heat, combine the heavy cream and dark brown sugar, stirring until the sugar dissolves completely.

Notes
