Cooking

  • In a large pot, bring the 4 cups of water or chicken broth to a rolling boil over medium-high heat.
  • Gradually whisk in the polenta, stirring continuously to avoid lumps.
  • Reduce the heat to low and let the polenta simmer for about 30 minutes, stirring frequently.
  • Once thickened, remove from heat and stir in the butter and grated Parmesan cheese until melted.
  • Season with salt and pepper to taste.
  • Optionally, add any toppings like sautéed mushrooms, roasted vegetables, or cooked meats.

Notes

For a vegan version, substitute Parmesan with nutritional yeast and use olive oil instead of butter. Store leftovers in an airtight container for up to a week.
