Ingredients
  

  • 1 cup dried figs chopped
  • 1 cup almonds ground or almond flour
  • 1 cup dates pitted and chopped
  • ½ cup honey or maple syrup
  • 3 eggs large
  • ½ cup coconut oil or butter melted
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • ¼ tsp salt

Instructions
 

  • Preheat the oven to 350°F (175°C) and grease a cake pan.
  • In a bowl, mix ground almonds, baking powder, and salt to form the dry mixture.
  • In a separate bowl, whisk together eggs, honey (or maple syrup), melted coconut oil (or butter), and vanilla extract until smooth.
  • Gently fold the dry mixture into the wet ingredients until combined. Avoid overmixing.
  • Fold in chopped figs and dates until evenly distributed in the batter.
  • Pour the batter into the greased cake pan and smooth the top.
  • Bake for 25–30 minutes or until a toothpick inserted in the center comes out clean.
  • Allow the cake to cool for a few minutes in the pan, then transfer to a wire rack to cool completely.
  • Slice and serve warm or at room temperature. Enjoy!

Notes

For extra flavor, add cinnamon, nutmeg, or orange zest to the batter. Top with crushed almonds or drizzle with honey for a beautiful finish. Store in an airtight container for up to 1 week or freeze for longer storage.
