  • 1 pound fresh green beans Trimmed
  • 1 cup heavy cream Substitutes: half-and-half or coconut milk
  • 1 cup grated Parmesan cheese Substitutes: Grana Padano, Pecorino Romano
  • 2 tablespoons butter Substitutes: Olive oil for dairy-free version
  • 2 cloves garlic, minced Can substitute with garlic powder if fresh is not available

Preparation

  • Start by trimming the ends of the green beans.
  • In a pot, bring water to a boil over high heat.
  • Once boiling, add in the green beans and let them blanch for 3 minutes.
  • Quickly drain the beans and transfer them to an ice bath to stop the cooking process.

Cooking

  • Heat a skillet over medium heat and add the butter.
  • Once melted, sauté the minced garlic until fragrant, about 30 seconds to 1 minute.
  • Gradually pour in the heavy cream while stirring continuously.
  • Bring the cream to a gentle simmer.
  • Add the grated Parmesan cheese a little at a time, stirring until fully melted.
  • Toss the blanched green beans in the skillet, ensuring they’re fully coated with the creamy sauce.
  • Season with salt and pepper to taste.
  • Serve warm.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. To freeze, place in a freezer-safe container for up to 2 months.
