Ingredients
  

Cake Batter

  • 1 cup all-purpose flour
  • ½ cup granulated sugar
  • ½ cup powdered sugar
  • ¼ cup unsalted butter softened
  • 2 eggs
  • ½ cup milk
  • 2 tsp matcha green tea powder culinary grade
  • 1 tsp baking powder
  • ¼ tsp salt
  • 1 tsp vanilla extract

Instructions
 

  • Preheat the oven to 350°F (175°C) and grease a cake pan.
  • In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy, about 3–5 minutes.
  • Add the eggs one at a time, beating well after each addition, then stir in the vanilla extract.
  • In a separate bowl, whisk together flour, matcha powder, baking powder, and salt.
  • Gradually alternate adding dry ingredients and milk into the butter mixture, mixing until just combined. Avoid overmixing.
  • Pour the batter into the prepared pan and smooth the top.
  • Bake for 25–30 minutes or until a toothpick inserted in the center comes out clean.
  • Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  • Once cooled, dust with powdered sugar or top with whipped cream and berries before serving.

Notes

Use high-quality matcha for the best flavor and vibrant green color. For extra depth, add a pinch of almond extract or lemon zest. This cake pairs wonderfully with green tea or a light floral tea. To store, keep in an airtight container for up to 3 days at room temperature or refrigerate for a week.
